Crispy Air Fryer Salmon Bites
I used to make this recipe all the time in grad school — because it’s so easy & DELICIOUS. I honestly forgot about it over the past year or so but now I AM BACK ON IT. This easy lunch or dinner takes less than 20 minutes from start to finish (the vast majority of that is just air fry cook time so go ahead, get through those last emails of the day, change over the laundry, or turn on your current TV show!) It can also be prepped ahead of time if that’s your jam.
Oh, and in case you didn’t know, salmon is packed with protein and nutritious Omega 3s. Omega 3s are polyunsaturated fats that are shown to enhance permeability and fluidity of cell membranes. Omega 3s have been shown to decrease inflammation and assist with other health conditions such as heart disease, diabetes, depression, and other health conditions.

Ingredients
Raw wild caught salmon (I tend typically use a Sockeye filet that is about 6 oz.)
Avocado oil mayonnaise (fav is from Primal Kitchen)
Coconut aminos
Instructions
Cut salmon into 1-inch cubes (I literally use kitchen scissors for this because it takes 30 seconds!)
Place salmon cubes in bowl & add 1 teaspoon of avocado oil mayonnaise & 1 tablespoon coconut aminos. Mix so salmon cubes are evenly covered.
Place on baking sheet and air fry at 325 degrees for 12-14 minutes or until golden crisp.
Add to a bowl and ENJOY! I did salmon, white rice, & zucchini for a comforting bowl, but then later this week did greens, fresh cut raw green beans, and mango chunks for a refreshing tangy salad — one of my favorite things about this recipe is how versatile it is!
Notes
Fish and other meat typically lose roughly 25% of their weight after cooking. Therefore, me starting with 6 oz. raw salmon will yield approximately 4.5 ounces cooked. For most accurate macro calculations, weigh the salmon after it is cooked.
